Ingredients:

  • 5 pounds (2.27 kg) of coarsely ground corn

Instructions:

  1. In a large pot, combine the corn, yeast, sugar, salt, and water.
  2. Bring to a boil over medium heat, stirring constantly.
  3. Reduce heat to low, cover, and simmer for 1 hour, or until the corn is tender and the mixture has reached an internal temperature of 160 degrees F (71 degrees C).
  4. Remove from heat and let cool for 10 minutes before transferring to a fermenter.
  5. Pitch the yeast into the fermenter and stir gently.
  6. Cover and let ferment at room temperature for 24 hours, or until the yeast is active and the mixture has reached an internal temperature of 70 degrees F (21 degrees C).
  7. Strain the mixture into a clean container and let it ferment for an additional 48 hours, or until it has reached a gravity of 1.020.
  8. Bottle or keg the finished product and let it age for at least 2 weeks before drinking.

Tips:

  • For a more flavorful beverage, use high-quality corn.
  • You can adjust the amount of sugar to your taste.
  • If you don't have a fermenter, you can make a large batch of cornmeal and let it ferment for 24 hours before straining and bottling.
  • Food-grade corn can be used to make corn whiskey.
